If you are living in Australia and follow a Paleo or Low Carb Diet you would have had to be living under a rock (or in a cave) to have not seen the Facebook and Instagram buzz about the Low Carb Down Under series.
Melbourne anaethetist Rod Tayler and Jamie Hayes, owner of Healthy Inspirations, managed to coax the irrepressible Jimmy Moore out from the US, to visit us in the land down under to help spread the good food message here.
Jimmy Moore’s personal code is to educate, empower and inspire people to take responsibility for their health and wellbeing and to share their personal stories with others, in whatever way possible.
And we heard some fantastic personal stories here in Byron.

Around 90 people came out from as far as Brisbane and Lismore to be a part of this event and I for one, enjoyed meeting everyone I chatted to between sessions and of course those of you who joined us for dinner and walks on the beach in the mornings.
I have had the pleasure of being involved in both the Melbourne and Byron Bay events and the feedback we have had from both has been phenomenal!
We had a fantastic panel discussion in Byron, fielding questions from people who had obviously listened intently to all that had been said and were prepared to critically analyse and challenge what they had heard.
Questions regarding the myths surrounding eating Paleo in the long term and potential risks of bowel cancer; how much fibre we should be consuming and how to get it on a diet that eliminates grains; what to eat after intensive exercise and what Crossfit is all about, just to name a few.
